I would combine a visit to the monster house + a tram ride + Victoria Peak + a walk in the escalator area and Central area. But that would take the whole day.
Hong Kong Park is still there, it's a lovely and free place, with cute little birds, you can even manage to touch them. Nearby, there is a tram departing to Victoria Peak, the tram costs around 300 Hong Kong dollars.
