I'm moving to Warsaw and I want to start by settling into temporary accommodation so I can calmly look for a long-term apartment on site. But I have a cat with me. Can someone recommend hotels/hostels that allow pets?

It depends on your budget. Resi4rent, heimstaden, and similar companies usually have a good attitude towards pets.
Renters took with a dog a couple of times, everything is fine. Only an additional fee is charged for the pet on top.

Airbnb has filters for pet-friendly options, in the reviews, people often mention that they stayed with pets. You can write in the booking request that you have an animal, then there will definitely be no surprises.
I settled on this option! Otherwise, in hotels (if you believe Google) there’s also a rule that if you leave — you have to lock your pet up. But in Airbnb, you can come to an agreement.

in general, it's better to estimate how much a decent hotel will cost you during the apartment search and compare it with the amount of money you would pay for a realtor who would find an apartment remotely
I agree, but I am an anxious person who needs to see/check everything myself in person. I haven't been to Warsaw yet; I want to look at all the districts myself.
