Hotel with 3 meals a day, in the evenings we naturally want to sit in a cafe, not overeat, have a beer, wine, and a meat dish. 2 excursions averaging $40 per person. We definitely won't be shopping for souvenirs, maybe just vitamins at the pharmacy. Or should we take more money? There are 2 of us?

Well, it really depends on how you're going to walk around.
I think an average of $50 a day will be more than enough, considering that you will be fully on the buffet. This money is in addition to occasionally sitting in a venue, buying some loukoum for tea, and going on a not particularly expensive excursion.
